00:REM: Yam's Ala Amiga

10: 6 large yams (about 3 pounds)
20: water
30: salt
40: 1/2 cup firmly packed brown sugar
50: 4 tablespoon butter, cut into small pieces

55: READ: Put Un-pealed yams in a 4 quart saucepan.
60: READ: Add enough water to cover the yams.
70: READ: Bring to a boil. 
80: READ: Reduce heat to low, cover and simmer 25-30 minutes or until tender. 
90: READ: Drain, let cool slightly. 
100: READ: Preheat oven to 325, grease 12 x 8" baking dish peel the yams, cut into 1/4" thick slices. 
110: READ: Arrange 1/3 of the yams slices in baking dish.
120: READ: Lightly sprinkle with some salt.
130: READ: Sprinkle with 1/3 of the brown sugar.
140: READ: Dot with butter. 
150: READ: Repeat with the remaining yams slices, salt brown sugar and butter to make 3 layers. 
160: READ: Cover baking dish with foil. 
170: READ: Bake for 60 minutes or until yams are heated through and the sugar and butter are melted.

180: REM: Makes 10 side dish servings.
190: REM: 214 calories per serving.
