00:REM:Pineapple Up/Download Cake

10: 2 tablespoons butter or margarine
20: 1/2 cup. brown sugar
30: (1) 14.5 oz can sliced pineapple (4 slices)
40: 4 maraschino cherries, halved
50: 1/3 cup shortening
60: 1-1/4 cup sifted all-purpose flour
70: 1/2 cup granulated sugar
80: 2 teaspoon baking powder
90: 1/2 teaspoon salt
100: 1/2 teaspoon grated lemon peel
110: 1 egg |

120: READ: Melt butter in an 8x8x2-inch pan
125: READ: Stir in brown sugar
130: READ: Drain pineapple, reserving 1/2 cup syrup.
135: READ: Cut slices in half
140: READ: Arrange atop sugar, placing a cherry half in each hollow.
150: READ: Place shortening in mixing bowl
155: READ: Add sifted dry ingredients
160: READ: Add remaining ingredients and reserved pineapple syrup
165: READ: Mix until flour is moistened
170: READ: Beat vigorously for 2 minutes
175: READ: Pour over pineapple
180: READ: Bake at 350 degrees for 30 to 35 minutes or until done. |

185: REM: Done??? Well, 30 to 35 always worked if it isn't done by then, turn on your oven. |

190: READ: Cool 10 minutes
195: READ: Invert on plate
200: READ: Serve warm with iced cream topped with Reddi-Whip, Miracle Whip* or your favorite non-dairy product. |
