00:REM:Lemon SHIFT-ON Pudding

10: 3-1/2 tablespoons flour
15: 1 cup sugar
20: 3 tablespoons butter
25: rind of one (small) lemon
30: 1/4 cup lemon juice
35: 3 eggs separated
40: 1 cup milk

45: READ: Mix flour and sugar.
50: READ: Cut in the butter.
55: READ: Grate lemon; set aside.
60: READ: Separate the eggs.
65: READ: Add the lemon juice & rind to the flour
70: READ: Add the yolks of the eggs, well beaten.
75: READ: Beat mixture well.
80: READ: Add milk and mix in.
85: READ: Beat the egg whites till stiff peaks form.
90: READ: Add the egg whites to the mixture and
fold in till blended.
95: READ: Put in buttered baking casserole dish
and set in a pan of hot water.
96: READ: Bake for 1 hour at 325

97: REM: Serve warm
