Orange Stuffing for Roast Duck

3 cups dry bread cubes
20: 1 cup diced apples
30: 1/2 cup seedless raisins
40: 4 tablespoon sugar
50: 2/3 cup orange juice
60: 1/4 cup melted butter
70: salt & pepper

READ: Mix ingredients in order listed
85: READ: Season to taste with salt and pepper
90: REM: A little more or less liquid may be needed, depending on the dryness of
the cubes
100: READ: Garnish the duck with watercress or parsley and with sections of orange dipped in a thick sugar syrup

READ: Serve the duck with an orange sauce made from 1/2 cup orange juice and 2 cups gravy
